Goofy question but here goes. If I have a royalty interest (NPRI) of 300 acres and 2 wells are producing, can I sell the royalty interest in just the 2 wells and keep the “overall”" royalty interest of the 300 acres and any future wells drilled?

Yea you can deed the wellbore only
You can word deeds pretty well any way the parties agree.

I’ve seen lots of ‘wellbore only’ deeds on EnergyNet. Probably already know this, but be careful with your phrasing. Might want a lawyer to help you.
You’d need phrasing in the document limiting the conveyance to wellbore only. Oil companies do this all the time when selling leasehold.
